2 tbs butter 2 stalks celery-chopped 3 carrots-chopped 1 med. onion diced 1 zucchini-chopped 2 cloves garlic-chopped or pressed 4 cans chicken broth 1 cup brown rice 1 cup lintels optional: 1 lb browned turkey 2 cans black beans
Recipe Properties:
Sauté the diced onion, celery, carrots, and zucchini in the butter unitl the onion turns brown adding the garlic during the last few minutes. Stir in the chicken broth, brown rice, and lintels. Heat until boiling. Reduce heat to low and let simmer for about an hour or until rice is tender. Serve right away, or freeze for easy dinners.--Add the black beans and turkey after the brown rice is tender.
Notes:
Keep an eye on your soup to make sure it doesn\'t get too dry. Add more chicken broth or water if need be.
