That moment when we think we cannot eat another bite of summer zucchini. This relish is much like a cucumber relish, except that it is very mild. This makes it perfect for using not only as a condiment for hot dogs and burgers, but also as a side for just about any meal. This is a great way to use a up a bit more of an abundance of zucchini, the ingredients are very simple, and it is quick and easy to make.
End of the Summer Squash Relish
Ingredients:
8 cups of green zucchini, finely chopped
4 cups of onions, finely chopped
1 -1/2 cups red bell peppers finely chopped
1/4 cup salt
3 cups of water
2 cups of vinegar
2 teaspoons of celery seed
2 teaspoons of turmeric
Combine all of the vegetables in a large mixing bowl. Sprinkle with salt and then cover with cold water. Let vegetables stand for one hours and then drain well. Combine the 3 cups of water, vinegar, celery seed, and turmeric in a large stock pot and bring to a boil. Let boil for 3 minutes then add the vegetables, and boil for 4 more minutes.
Pack mixture into sterilized hot jars, leaving a 1/4 inch head space. Cover jars with lids and rings and put in a water bath for 10 minutes. Makes 8 pints.
